Sienna, Meadowhall, Sheffield

Brief

Design a sleek, partially open kitchen and central U-shaped bar capable of delivering an all day menu – serving brunch, small plates, an eclectic mix of classic mains and seasonal specials, having the ability to provide gluten free and vegan options, coupled with signature cocktails, wine, draught beer and artisan coffee.

Sienna’s, located in the new Flannels Department store in Meadowhall shopping centre, was the first significant project that OCS were awarded. Working closely with our key suppliers and fabricators we were able to achieve a bespoke and unique feel to the kitchen. Utilising Lincat Opus 800 equipment on a bespoke mobile cooking stand aligned the equipment and fabrication to create something representative of a high end bespoke cooksuite complete with built in refrigeration by Adande below.

Cafe Clo, Flannels, Leicester

Brief

The little Sister to Sienna, Cafe Cló required the same brief on a smaller footprint. Having no extraction to outside air posed a restriction on the type and volume of equipment which could be used for cooking. We liaised with Reco-air to choose a cooking platform which would meet the needs of the client whilst remaining within the confines of spatial allocation for the filter set required for Reco-Air.

Cafe Cló, Fosse Park, located on the ground floor of Flannels department store, is a beautifully designed intimate restaurant very much based on the Sienna’s platform in terms of equipment selection and design principles. It boasts a highly efficient working space capable of delivering an all day menu, small plates, coupled with classic dishes and seasonal specials, signature cocktails, bottled beer, wine and artisan coffee.

Bacino, Flannels, Liverpool

As it had done for previous projects, at Meadowhall and Fosse Park, the Zanna Group turned to OCS for the design of an open plan kitchen that would not only contain all the equipment required to serve great tasting, authentic, Italian food, but also create a sense of theatre for the diners. The ground floor restaurant features a cocktail bar, whilst in the basement there is a dedicated preparation and storage space complete with dried goods, chilled store, and bar cellar.

Bacino, located in Flannels, Liverpool, offers a bold new Italian concept in a modern, luxury space. Its all day menu places brunch classics alongside pizzas, pasta, aperitivo, cocktails, coffees, and desserts, which are all made using seasonal, fresh ingredients prepared with creativity.
