Bacino Restaurant – Flannels Department Store

A bold new Italian concept in a modern, luxury space, its elevated all day menu places brunch classics alongside pizzas, pasta, aperitivo, cocktails, coffees, and desserts. All made using seasonal, fresh ingredients prepared with creativity.

As it had done for previous projects, at Meadowhall and Fosse Park, the Zanna Group turned to OCS for the design of an open plan kitchen that would not only contain all the equipment required to serve great tasting, authentic, Italian food, but also create a sense of theatre for the diners. The ground floor restaurant features a cocktail bar, whilst in the basement there is a dedicated preparation and storage space complete with dried goods, chilled store, and bar cellar.

Executive chef for the Zanna Group, Paul Lupton, worked closely with OCS on the design of the kitchen and has nothing but praise for the way they managed the project from start to finish. ‘We had obviously worked with OCS before, but no two sites are alike and so each one brings its own challenges. That said, we were still looking for the use of innovative equipment that would ease the workload in the kitchen, whilst backing up our desire to be as energy efficient as possible’.

‘As with previous projects OCS demonstrated excellent knowledge of the equipment – they even arranged for us to visit the manufacturer of the Cuppone pizza ovens for training on the units. Throughout the design and installation process they were always on hand to answer any questions that we had and to deal with any issue that arose. The attention to detail and careful planning meant that when the time came, they were able to complete the installation well within the allotted timeframe.

This excellent level of customer care has continued, post installation, with OCS always on hand to provide support with things like additional training and service and planned maintenance visits.’
